Well, lets say you wanted to edit the XRT's interior. You would go into your DDS folder inside the LFS data folder and find the file XR_Interior 1 and XR_Interior 2. XR_Interior 1 includes the dash and tailights, well XR_Interior 2 includes the rear seat and side panels. The same goes for the other cars except their might not be 2 files of interiors. So if you wanted to edit the XFR's interior you would edit XF_Interior 1 or 2. You need a program like photoshop or paint shop pro to edit them. Everything else is skill and artistic talent, and well, not everyone has that

you can also use GIMP for windows which you don't need to pay $$ for, and seems to be pretty stable these days
