dam awesome pedals man i was thinking about taking car pedals and making a nice cockpit with real car pedals but havent found some good sensors

any cheap lineal potenciometer 100K will do the job.

Not totally, half or a little bit more. But is much better than logitech pedals, double resolution i think.

How does the H-Shifter work? Surely it'd need some sort of software to tell the game which gear the shifter is in. Or is each gear assigned its own button?

No software needed, windows recongnize shifter like a USB Joystick (in fact is a hacked usb joystick) and every gear is assigned to a button.
