Demo cars are stock cars. Officialy there is no way to make another dashboards.

But there is a way to have digital dashboard but not in game, but by 3rd programmes:

SIMHUB https://www.simhubdash.com/ in here you can do from real car dashboard with usage of arduino. Or just use in build digital dashboards so you can use your phone to show dashboards.
