Yes, you can edit the interiors by editing the textures with any image editing program capable of opening dds files. For example with Photoshop. You will also need a dds plugin which you can find on the nvidia website.
I believe there's also a plugin for The GIMP which is a free image editing program. And it also works with Paint Shop Pro, which has a free trial.
As for the textures, look in your live for speed/data/dds folder for filenames like FZ_interior1.dds
