F11 if i remember correctly. then use the arrow keys to change values.

Yup, F11 to change settings on the fly. I believe you can do fuel at pit stops, what ammount of wear the tyres are changed at, what tyres you have on, what pressures, multiple suspensions settings and a couple more. Its shift+arrow keys to change these settings. The settings change the moment you take a pitstop.

Its worth noting that the F11 (live), menu settings ,are reset when you pit (shiftP-not pitstop).The lower F12 (apply at pitstop (psi, camber ect)) settings, actually change the setup and do not reset when you telepit, but instead are saved as permanant changes to the set, IIRC you have to make pitstop before telepitting to achieve the above results.
