I can do something close to that, but it's not it. Mine doesn't follow the road, it sometimes shows the front of the car, sometimes rear.'

I don't really know much about recording videos in LFS, but maybe you find this app helpull LFS Record (camera animation & video recording tool). I guess it should be possible using this

To me it looks like nothing but a chase view. Press V until you switch to the chase camera. Make sure you have set 'no' to 'Fixed to forward axis' in Options – View .
