When you post something, then somebody quotes you, then you edit your post, quote updates. Easy and simple.
Not easy at all since the content of a quote, that is the text between the [quote][/quote], can be modified by the quoting author. The only way to make it work reliably is to change quote to simply hold a reference to the original post, its post id to be precise. The forum would then always pull the latest version of a post from the DB, rather than actual quoted text from the very post the quote appears in.

You couldn't shorten the quote, you couldn't pick just a part of it, you couldn't remove images from it and quite frankly it's completely unnecessary

I think it's a bad idea because when you quote a post you are quoting it for what it currently says, not for what it could say in the future. Say, for example, someone posts "I like the colour blue". I might quote that post and say "Why do you like the colour blue, red is so much better". Then they edit their original post to say "I like the colour red" and now my quote appears like nonsense, where before it was a masterpiece. Also, it would not be a simple thing to implement as morpha says.
