What's the best simulator to this date to learn the nordschleife track?
rFactor with a good mod then. 
Most realistic so far....probably the GTR Evolution one, but I prefer R-factor's phyiscs, I wonder has the Evo Nord been ported to R-factor already? It's "illegal" but I am sure somebody must have done that.
NLC Modding group have done an amazing version of the Nurburgring with their 2005 VLN mod. Best one around thats on rF IMO.
The evo nords has been around for gtr2 and rfactor for a while. There is a much nicer version of it on the way from Com8 for the wip 2009 NLC VLN mod.
No not necessarily, I've driven the track in real life already but I want to learn the corner combinations better. To know what corner is coming up next instead of guessing what angle the next corner is...

Good choice! Make sure you also have GTR Evolution though, as it is require to install the mod.

I've got the GT Legends version of the track on M3 Challege which I find to be a great combo - M Power + Nordschleife = 
Is that mod on Evo or Rf? I'm confused. Is it free? Looks great, like to try the mod.
I found GT4 to be a pretty decent representation of the real thing, but TBH, pretty much any sim will give you enough of an idea of the corners to know whats coming next, although, I have yet to find one that has the visual cues of the real thing down to a T.

I saw a video, nfs shift have nordschleife, but nfs s is not a good sim... ( Well, in fact is not a sim at all)
