Spare tyre and MOT
My spare tyre is flat (well, the spare is actually on the car now, but you get what I mean) and my MOT is due in a week or so. Do I need to get the spare fixed to pass the MOT?

Nope, the condition of the spare tyre is not part of the MOT process (source). There's a common misconception that you don't need a spare tyre but if you have one it must be legal.

While we're on the subject, do I need to bring any documentation when I have the service/MOT done? (I honestly can't remember from the previous times, I just tend to bring the folder of 'car stuff' with me in case they need to see anything) I've just moved house and I've not yet got my new V5C with the new address.

Best thing is to bring the old MOT cert from last year so they can get the car details easily. And as it has been said already, spares arent included, but something I've learnt with older cars, if it aint there they cant test it
Just take it out the car until after the test mate!
