You might be able to get Flipcams and use one of the custom views from that and make it outside your car. As for the speedo's, theres a button says " Real, Virtual, Both" near the bottom for them, just do real or off.

I think that in external camera mode like that, you don't have the ability to hide speedometer. The best you could do is with the "custom" view, set everything as close as you could to the external

Neither is iRacing. I'd say don't you have races to run, but I suppose this is your 4 hour gap between races.

Press V until you find the chase cam view
Then go into view options. There is options for smoothing, height, angle, speedo gauges and all sorts of stuff for it.

Edit: ok my bad, like dawesdust says, you cannot hide the gauges. Except with CTRL + F which will hide all of the HUD
