I understand that a demo will attract all different kinds of players, but I have yet to find an online server where racing takes place. Is there any hope of finding some serious racing? Have any tips for me?

for demo's there isn't much but i'd recommend the MRc FBM servers and GTi servers

Avoid the "car park" servers, in S2 one can use the car park to make your own tracks but in demo it is just used for destruction derby.
Avoid servers whose names contain "drift / cruise / derby / bangers" or similiar.

I do not drive on demo servers much but those I remember being okay:

[AMG] Motorsport

[MRc] GP Track BMW

[AA] Blackwood and [AA] Rallyecross

Those are basically always filled and racing is somewhat clean.
They all run 3-5 laps sprint races though.
Apart from normal racing, on the [AA] servers you can type into chat: !event or !events to display their race calender. I have never taken part in those races, but it is maybe the most serious racing one can find in demo.. (more laps, real quali etc)

i can also approve the [AMG] Servers for fast and mostly clean racing.
if there is a problem, an admin is always around the corner an clears it up.

Also try Corse Motorsports servers.
They are usually fairly busy around 18:00 - 22:00 (BST). I am one of the Admins there and we have good clean racing.

I just got banned from MRc Formula BMW for 1 month and why I got banned!!??
-I give a way to faster people
-Tried to avoid most of the crash
-Let other people race first coz Im slow..
