Hi.

Does anyone know if there's any way (using the InSim API, keypresses, or anything) to toggle a car between human and AI control? It's something that rFactor2 has (just press the I key while driving), and is very useful for testing purposes, when developing sim plugins and automation software.

Such AI/human toggle does not exist.
Maybe related, some things I did for testing/dev insim:
-Use TAB key to switch view between cars.
-Run multiple instances of game (works quite good w/ windowed mode)
-used layout editor to spawn my car at certain positions instead of having to drive there
