recently i have bought a s3 license and i have been wondering if i swap an ssd (256gb) to another ssd (1tb) on the same laptop. Will it still count as one device? Since i have already bought the license and i am going to upgrade to a desktop computer in the near future (i will format the old ssd)

No need to worry - initialy you have 3 unlocks with your account,each friday you get one unlock unless you already have 3. If you reinstall OS,you can install LFS again and unlock again. You can even install LFS on multiple computers,you just cannot play online with more than one computer at a time.
