Club racers use infra-red pyrometers, but they are pretty worthless, as they only show the surface temperature of the tyre, which won't be an accurate assessment of the core temperature once you've ambled back to the pits. It's far far better to use an intrusive device, that actually penetrates the surface of the tyre slightly.
It's like reading spark plugs - it's only useful if you measure/read it immediately after hard driving - idling and coasting gently will carbon up your plugs/cool your tyres, and make the readings pretty much useless.
