FE green / FOX. people used to race it loads a wee while ago, and i was incredibly fast (not being big headed, but its the only combo where i can drive consistantly 1 second off WR pace, and was winning loads of races). sadly nobody races it anymore

I have only tried FE Gold where i got within 1.5 of WR but FE Green could be fun. I will have to set it up on a DR server sometime

I really enjoy any of the road cars at SO1R - that chicane is so much fun! As long as noobs don't try to power into it and take out the entire field.

I also really like FE1R in UFR, but then that car's fun on most tracks

So many fun ones.. XFR @ AS North, LX4 @ any SO, FOX @ BL1. XRT @ FE is worth a mention as well.
