When adjusting tire pressure in the F12 menu, and making a pit stop where all the tires you set a pressure change on are changed, it holds you for setup changes after they've been swapped out. I'm not 100% sure, but I would think the pit crew would adjust the tire pressure before they put the new tires on. Why are we sitting through setup changes when they aren't done during the pit stop? Sorry if I'm mistaken.

While you're probably right that this is inaccurate, what difference does it make in a sim where you can repair any damage in 20 seconds? Everything about the pitstop is unrealistic at the moment, so why not focus on the big issues rather than these small niggles?
