You are right, that was one of my (many) problems. It was solved using an auxiliar video projector, slightly placed on the right, out of the camera's angle, wich I used to see the road.
I had to cover everything in blue in order to do the chroma effect. This is my first video with that technique and my conclussion is that the background has to be prepared as good as you can to get acceptable results.
I have recently added a new video to my youtube channel. It's a multiple view video of me driving the LX6 (with a R500 skin I made) in West Hill Inverted.
I use a G25 wheel mounted on a homemade racing cockpit, however, I've got my keyboard very far way from me. Is it possible to remap the Shift + R button (vote restart) to a G25 button?

And thinking about dual monitors and projectors...... what about 2 projectors connected together???? OH MY GOD!!!!! Like a REAL PANORAMIC CINEMA. Just great loool
I have tried too, but I don't like the front black bar in the center, any idea to decrease that space? It are both 19" LCD screens. My card is an ATI X800 XT
I would like to create a video with a cam in the car, but behind the driver, so you could see his movements. I've tried using shift + U but when the car takes a corner the camera doesn't follow the movement and gets out of the car.
