Right, I have a 4x20 LCD Display on my case, and thought it would be a neat idea to write a plugin for LFS for my LCD.

I currently use LCDSmartie 5.3 for displaying my LCD and it allows you to write you own programs, my problem is this - i have very little programming experience but am willing to learn it - does anyone have any idea how I could possible extract things like Car Speed, Car Position, LapTime, Sector time etc from the game.

I'm presuming these will be variables that can be used but if anyone that can help could please offer any assistance, I would be most grateful.

You'll have better luck in the Programmer's Forum. And, most likely, you're going to have to learn to program.

Frex makes a digital display that shows which gear you're in. You might be able to cobble something together using whatever software they use.
