I am a newbie to LFS, and when I start the sim with DK2 and get into car, all I see are the wheels of my car.. what are the settings to be in the cockpit?

Pressing the V key changes the view - keep pressing until you get the view you like.

Check http://en.lfsmanual.net/wiki/Keys for default key bindings.

You are maybe in force view. Use F to switch back to normal.
