The ATI/AMD's 5xxx series and later supports Eyefinity, which makes Windows, including programs and games, see the three monitors as one single large monitor.

That, or you can get UltraMon which allows a taskbar on each monitor to have windows and programs active on that monitor to only show up on that taskbar and other multimonitor tweaks like span window across entire desktop. Pretty cool.
