Stig is multiple people, whenever a Ferrari is driven round the track its a test driver from them sent from Italy and so on. Guess they have an instructor Stig aswell for the SIARPC bit.
Don't think the show is done for good, its too much of a success (being sold all around the world it should bring the BBC a ton of money). Give it a week or two (conveniently giving them time to sort out the P1/918/LaFerrari duel) and the show is back on the screens.

yeah I feel the same. It was one of the first cars I took around Joux Plane last year, and couldn't hardly make the hairpins with it. Nowadays I can take them sideways.
But I think its overall physic changes and not so much changes specific to that car.
it was really simple ( a line like 'url:http://www.assettocorsa.net/en/' in the track ui json), in my eyes too simple, trolls could insert whatever urls in that bracket.

looks like an error of the O2 sensor. Once the ECU loses its signal it goes into limp mode to safe the engine, runs mega rich and stumbles as you call it ('open loop' in general means running without sensor feedback and control)
Could be an all out sensor error, or just a lose or corroded cable. The O2 sensors sit pretty exposed to nature (water and salt, dirt and stones)
