Why would a racing team not fit their exhausts properly? It would vibrate yes, since that is what makes the great sound of a racing car, but you'd never actually see that...
Yes, if you have 720° both in the Profiler and ingame, you will get the FFB-stops at 720°... That'll only help you in the road cars though, the faster machines have less lock and the FFB stop will still be at 720°...
"Help" is maybe exaggerated - I have yet to hit full lock (and thus the stops) when everything didn't went all messy moments before...

With him still only getting 15th place in qual while Alonso snatches pole and now all the mud-slinging afterwards it was obvious - I'm actually surprised it took a whole week...
I *think* he refers to still being slower than the Peugeots over a lap of Le Mans and their new problem of sucking up dirt that clogs up the radiators...
This could hint to a potential problem: Maybe you're asking too much of your tyres... Try braking earlier, steer gentlier and probably a bit less too...
Anyway, it's always better to start slow and gradually get faster (you will even if you're not trying to, I promise) than wanting too much too early and then wondering in your destroyed car what the hell went wrong... Jackie Steward's advice is bang on: treat the car like a vicious dog - make a sudden move and it'll bite you...
It came up once or twice already, but no biggie - it's not as if the game was is or will be leaving its mark in the sim genre imo...
Last time I tried it half a year ago, I got lift-off oversteer in the Cayman - and as it turned out, it was the only way to corner with that thing... Driving was quite painful - I basically got a slideshow of me driving and my rig is no slouch...
To top it all off, I really can't take a self-proclaimed sim seriously that has dedicated physics-files for racing, drifting and off-roading...
Air has never been good in transporting data and never will be, but like for so many other things marketing went into overdrive and lazy bastards people generally are chose comfort over quality...

I don't have a deeper understanding of the german system, but looking at the legal notes of their websites, I can't find a private sector company among them...
And now I'll throw in the ORF for good measure, also not a private sector company... It might have private sector subsidiaries, but the main organisation that does the TV is publicly (read: governmentally) owned...
There is a cooling from the outside as well, you can see this very well if you set the wind to orcan-like, but I agree the temperature model is grossly flawed - there should be much more fluctuation than there is currently, not just faster cooling...
