You could find this question answered dozens if not hundreds of times if you read through all the posts on this board, but I save you from that hassle.
Making very much money out of Nextgen (that's actually Previousgen in a short while) console game needs big marketing. And for big marketing, or basically even publishing a console game you need a publisher. And to get a publisher you have to have a product to convince the publisher with, that it's going to sell a lot. LFS is not that kind of product, because of all game sells racing games only cover a tiny portion. And of all racing games simulators only cover a tiny portion. And of all simulators LFS covers a tiny portion. Making a console version wouldn't be economically reasonable.
Other reasons why it wouldn't be reasonable: Consoles don't even have a proper hardware to play LFS with, and LFS has too long life cycle, it would have to be rewritten several times because there's always this "next gen" every 5 years or so...

Once you get over the first step, you'll soon notice that it wasn't that hard. Just drive slow enough that you can always maintain control of your car, keep your eyes on the map and mirrors, car on the racing line and be predictable with your maneuvers.
Depends on what you mean by "good times", but didn't Chaos just say that you can? Not everybody of course. And the best LFS'ers aren't necessary the fastest learners for real racing. But there are people who could adapt those differently placed controls and g-forces in less than a day.
And why would one need to open a window in a driving sim? Let's get back to it when we have extreme damage modelling and cockpit full of smoke, shall we?
The more you play LFS, the closer to real life it starts to feel. Compared to other racing sims, the dynamics (of mostly the tires) is just astonishing. Even though you can't feel the g-forces, and thus the physical experience isn't quite near what you would experience in a real car, you can apply the exact same skills you've learned in LFS to real world.
LFS has improved my knowledge of vehicle dynamics and skills of car control big time, but it also works the other way - just a few short runs on small karts have had positive effect on smoothness in LFS.
I'm just repeating what others have said, but you should stay away from GTR, GTL, GTR2, rFactor, WTCC Race, Race 07, BMW Challenge and the next 10 exact same games that are going to follow with a different title, graphics and table values.
Basically only decent sims by my measures are GPL, RBR, LFS and Nascar 2003. But if you want to race online, but no ovals, LFS is the only choice.
I'm pretty sure, and Tristan can confirm if this is not the case, that in real race car you don't hear other cars over your own screaming engine as well as in LFS.

I've noticed that the quality of pickup races and number of crowded servers (at least the ones running cars that I like to race with) have both improved from patch V to Y. Also the goal of LFS devs is to create a realistic racing sim, which obviously requires changing the game every now and then. And since you have bought the game, you must also have agreed the end-user license agreement, which says:
"1.4. You must be aware that we can alter any aspect of LFS as we see fit. Improvements, fixes and/or changes made to the game, are to be expected."

Funnily enough, I once managed to avoid an accident (irl) by pulling the handbrake and initiating a scandinavian flick. But of course it would have been wiser not to get in that emergency in the first place.
It's true that immaturity amongst S2 racers seems to be increasing, but we must also remember that when compared to any online games I've ever played, LFS has by far most well-behaving and mature userbase!
Yesterday I drove the LX6 for few hours, and noticed how hard it really can be correct sudden slides. One hand on the shifter and one wheel on grass = one frokki less in the race . I haven't noticed such a thing with other cars.
